One of my absolute favorite Christmas traditions in our family is the passion that goes into stuffing each other’s stockings year after year. Stockings have always been reserved for the surprises that weren’t specifically on the recipients’ lists – gourmet treats, fine teas, kitchen gadgets, thoughtful small gifts, and the Grand Santas would always tuck in some extra Christmas cash for a little post season shopping.

My Poppop got us good last year by placing our Christmas cash in plastic money puzzles. The idea being that if you navigated through the maze of a cheap plastic puzzle, it would trigger the release of your money. Let it be known that I was the only one to successfully solve not only her own puzzle, but had to complete those of my mother and aunts as well so that nobody took to them with screwdrivers and hammers. Boy did we all get several hours of frustration a good laugh out of that one!

Our family had to start making new traditions this year after the passing of my beloved grandparents, but one tradition that we made a point to uphold was the stuffing of the stockings. And by stuffing, I mean stuffed. At least one person gifts everyone reusable totes each year to catch the overflow and this year was no exception. One of Santa’s elves placed a box of crispy toffee cookies in my stocking that after one bite I immediately knew I had to recreate at home. These little bites of toffee crack are sweet, crispy, and highly addictive.

The recipe starts with a super simple crispy sugar cookie recipe that was handed down to me by Z’s mother. I knew it would be the perfect, not too sweet, canvas for a generous sprinkling of toffee. The key to a deliciously crispy cookie is making sure that the toffee is nestled snug into the cookie dough and that the cookies are rolled out thin and even. The best way to do this is to roll the dough to 1/4-inch thick, sprinkle a generous layer of toffee over the surface, and roll over once more to press the toffee into the dough and ensure an even 1/4-inch thickness throughout. BITS'O BRICKLE TOFFEE COOKIES
 
Yields: approximately 4 dozen cookies
INGREDIENTS
  • ½ cup butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 cups flour
  • 1 cup Heath Bits'O Brickle Toffee Bits
PREPARATION
  1. Cream butter and sugar until fluffy. Add egg and vanilla and mix until well incorporated.
  2. Sift baking powder, salt and flour together and stir into wet mixture until soft dough forms. Wrap dough in plastic wrap and chill for at least an hour hour.
  3. Preheat oven to 400 degrees Fahrenheit and line baking sheets with either parchment paper or silicone baking mats.
  4. Roll dough between two sheets of freezer paper to approximately ¼-inch thick. Remove top sheet of freezer paper and generously sprinkle toffee bits on top in an even layer.
  5. Replace top sheet of freezer paper and re-roll to press toffee into cookie dough. Remove top sheet of freezer paper and cut out 2-inch scalloped rounds.
  6. Reposition scraps, toffee side up, with edges slightly overlapping, in the middle of your freezer paper and re-roll to even out. Cut and repeat until all dough has been used.
  7. Transfer to prepared baking sheets and bake for 8-10 minutes until edges are golden brown.
  8. Transfer cookies to wire rack and allow to cool completely before storing in an airtight container.
