It’s no secret around here that we love tea and that we especially enjoy sitting down to a relaxing afternoon tea. From our no-frills local tea house to extravagant hotel lobbies, nothing beats sitting down to relax over a multi-course light lunch and high tea serving. Afternoon tea is probably one of my favorite special dates to go on with my mom. We love sampling a variety of gourmet small bites, indulging in tiny pastries, and savoring pots of fine teas that soothe the soul. Most importantly, we love to be able to step out of the fast moving world around us to sit and catch up for a few hours while feeling anything but rushed.

Ombre Rose Cream Cheese Spritz Cookies

I have been wanting to make some ombre spritz cookies for a while and I couldn’t think of a better occasion than pairing them with a piping hot pot of tea to celebrate my mom this Mother’s Day. I took a fairly traditional cream cheese spritz recipe and swapped out vanilla for the Princess Cake & Cookie emulsion. You can absolutely use vanilla if you don’t have the emulsion on hand, but the hint of lemon in its unique flavor really boosts the cream cheese flavor of these already delightful cookies. Ombre Rose Cream Cheese Spritz Cookies

OMBRE ROSE CREAM CHEESE SPRITZ COOKIES
 
Yields: approximately 72 cookies
INGREDIENTS
  • 3 ounces cream cheese, softened
  • 1 cup (2 sticks) butter, room temperature
  • 1 cup sugar
  • ¼ teaspoon salt
  • 1 egg yolk
  • 1 teaspoon Princess Cake & Cookie Emulsion (or pure vanilla extract)
  • 2½ cups of flour
  • food coloring (I used Americolor burgundy gel coloring)
  • sanding sugar
PREPARATION
  1. Preheat oven to 350 degrees Fahrenheit.
  2. In the bowl of an electric mixer fitted with the paddle attachment, cream together cream cheese and butter until smooth.
  3. Add sugar, salt, egg yolk and Princess Cake & Cookie Emulsion and mix on medium high speed until light and fluffy.
  4. Add flour ½ cup at a time, mixing between additions to fully incorporate.
  5. Place approximately ½ cup dough into cookie press and press onto cookie sheets.
  6. Return scraps to bowl and add 1 drop food coloring mixing well to combine. Press another ½ cup of dough onto cookie sheets and repeat process until all dough has been used.
  7. If dough gets too sticky as food coloring is added, add 1 tablespoon of flour and mix well.
  8. Sprinkle cookies with sanding sugar and bake at 350 degrees Fahrenheit for 10-12 minutes until bottoms are lightly browned.
  9. Allow to cool completely before storing in an airtight container for up to one week.
