With summer temperatures rising and families moving outdoors to beat the heat by the pool, it’s no surprise that July is National Grilling Month. Grilling is a great way to avoid excess heat in the kitchen while still feeding the family a delicious and nourishing meal. Plus, the social aspect of gathering friends and family for a BBQ just can’t be beat. I’ll leave the grilling to you, but I’ve got a side salad that is the perfect pairing with grilled chicken or shrimp.

I have been making Greek pasta salads for decades due to their bold flavors and simplicity. In the past, I’ve tied everything together with either a bottled Greek dressing or a hodge-podge of oils, vinegars and spices that I had on hand.
