DOUBLE CHOCOLATE FUDGE FROSTING
- 9 ounces semisweet chocolate
- 2¼ cups confectioners' sugar
- ¼ cup unsweetened cocoa powder
- Pinch of salt
- 6 ounces cream cheese, softened
- 1½ sticks unsalted butter, softened
- ¾ cup sour cream
- Melt chocolate over a double boiler, stirring until smooth. Set aside and allow to cool until just warm to the touch.
- Sift together confectioners' sugar, cocoa powder and salt.
- In the bowl of an electric mixer fitted with the whisk attachment, beat together cream cheese and butter on medium high speed until smooth.
- Reduce speed to low and gradually add dry ingredients, beating until well combined.
- Add sour cream and melted chocolate and beat on medium speed until combined and fluffy.
- Refrigerate in an airtight container until ready to use. Allow to frosting to return to room temperature before piping.
